– 2 tbsp butter
– 1 tbsp olive oil (optional)
– 1 medium onion, diced
– 2 cloves garlic, minced
– 2 lb potatoes, peeled and diced
– 4 cups chicken or vegetable broth
– 1 cup milk or half-and-half (add more for creamier)
– 1/2 cup sour cream (optional)
– Salt and pepper, to taste
– Optional: shredded cheddar, chopped chives, bacon bits
Instructions:
1) In a pot, melt butter (and oil). Sauté onion 3–4 min; add garlic 30 sec.
2) Add potatoes and broth. Bring to a boil, then simmer until potatoes are very tender, 12–15 min.
3) Partially blend with an immersion blender (or mash) to your preferred creaminess.
4) Stir in milk (and sour cream if using). Heat gently 2–3 min; don’t boil. Season with salt and pepper.
5) Serve hot with cheddar, chives, and bacon if desired.
