– 1–2 tbsp hot honey (or honey + chili flakes)
– 1 cup baby spinach or kale
– 1 scallion, sliced (or cilantro)
– Lime wedge (optional)
– Avocado slices (optional)
Instructions:
1) Roast sweet potato: Toss cubes with olive oil, salt, and pepper; roast at 425°F for 20–25 min (or air-fry 400°F 12–15 min) until tender and caramelized.
2) Cook beef: Brown ground beef in a skillet; drain if needed. Season with paprika, cumin, garlic powder, salt, and pepper. Stir in greens to wilt (1–2 min).
3) Sauce: Stir hot honey into cottage cheese with a pinch of salt and a squeeze of lime.
4) Assemble: Bowl the sweet potato, top with beef and greens, spoon over hot-honey cottage cheese. Finish with scallions (and avocado/lime if using). Enjoy!
